Fantastic Summer Salads
Chicken Ceasar Salad
~1 cup pulled chicken
~ 1 head romaine lettuce, washed and cut into bite sized pieces
~ 1/4 cup shredded parmesan cheese
~ 1/2 cup Ceasar dressing
~ 1/2 cup croutons

Combine all ingredients in a large bowl. Toss thoroughly and serve immediately. Serves four. (Try grilled shrimp or portabella mushrooms for an alternative to the pulled chicken.)

Three Bean Salad
~1 14 ounce can of red kidney beans, drained
~1 14 ounce can of cut green beans, drained
~1 16 ounce can of garbanzo beans (chick peas) drained
~1/4 cup of diced red onion
~1/2 cup of Italian dressing

Combine all ingredients in a large bowl. Mix thoroughly. May be stored in a covered, refrigerated  container for up to three days. Serves four.  (Try adding black beans, sweet peas, navy beans, black-eyed peas, lima beans or butter beans for more variety.)

Chicken Pasta Salad
~ 1 cup pulled chicken
~ 3 cups cooked pasta shapes (rotini, farfalle, penne, macaroni, shells)
~ 2 cups diced vegetables (squash, broccoli, zuccinni, carrots, calliflower)
~ 2/3 cup Italian dressing
~1/4 cup diced red onion
~1/4 cup shredded parmesan cheese

Combine all ingredients in a large bowl. Mix thoroughly. May be stored in a covered refrigerated dish for up to three days.  ( For a more Italian flavor, try adding black olives, tomatoes and artichoke hearts or for a Greek salad, add feta cheese, cucumbers and 1 teaspoon of lemon juice.)
