Vadalia Onion Pie


At a glance

1 cup Ritz cracker crumbs
6 TBsp melted margarine
2 Large Vadalia onions, thinly sliced
2 TBsp butter or margarine


Mix together and press in an 8” pie plate or deep casserole container, bringing crust up the side of dish. (You can use a larger container than 8”)

Saute onions in butter or margarine until tender.  Pour onto crust.

Mix together:

2 well-beaten eggs
3/4 tsp salt
1/8 tsp pepper
1/2 tsp Italian seasoning (optional)

Pour over onions.
Sprinkle with 3/4 cup grated sharp cheddar cheese.
Bake for 30 minutes at 350 degrees.
