Sweet Potato Bake


In an effort to introduce more sweet potatoes into my family’s diet in place of the standard potato, this is one dish that is a big hit and does not add any extra sugar calories.  The sweetness of the sweet potatoes and onions with the herbs leave my kids asking for this side dish again and again…and is so easy!

5 sweet potatoes or yams, peeled and cubed into ½-inch pieces
1 red onion, diced into ½ inch pieces
1/3 cup canola oil
1 - 2 Tbsp. herbs de province, as to taste
Salt and pepper to taste


Mix all ingredients in large bowl and pour into baking dish.  Bake uncovered in preheated oven at 375 degrees for 45 minutes - 1 hour or until the potato edges become brown and crisp.
