Spice-it-up Orange Chicken
This is a flavorful familyfavorite and can easily be made with beef instead of chicken. Just substitute 1pound of thinly sliced flank or round steak and beef broth for the chickenbreast and broth.
2 tablespoons canola oil
1 pound chicken breast, skinned, boned, and cubed 1/4cup orange zest
1 garlic clove, minced
1/2 teaspoon grated fresh ginger
2 tablespoons cornstarch
1 cup chicken broth
1/4 cup soy sauce
1/4 cup dry sherry
1/4 cup orange marmalade
1/4 to 1/2 teaspoon crushed red pepper
In a large skillet over medium-high heat, heat the oil.
Add the chicken and fry for 3 minutes, until golden brown on all sides.
Add the orange zest, garlic, and ginger. Stir-fry for 1 minute. Add all of theremaining ingredients, bring everything to a boil over medium heat, and stir for 1 minute.
Serve over brown rice.
