Shrimp and Onion Fritters


At a glance

1 pound shrimp, peeled and devained, chopped
1 medium onion, thinly sliced
1 small green bell pepper, trimmed and minced
1/2 medium carrot, peeled, minced
1 large egg
1 cup water
1 cup cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt
6 cups peanut oil



In a medium bowl, combine the shrimp, onion, bell pepper and carrots. In another bowl combine the beaten egg and, flour, baking soda and salt. Then stir in the shrimp mixture. In a wok, heat the oil to 360 degrees then fry tablespoons of the batter, turning occasionally, 3-4 minutes until crispy. Drain on paper towel.
