Mom’s Peanut Brittle
Description
You can almost break your teeth on this peanut brittle, but what a way to go! Corn syrup usually has vanilla flavor notes in it.
Ingredients
Unsalted Butter, to grease pan
2 cups sugar
1 cup light corn syrup
1 cup water
2 cups un-roasted Virginia peanuts
¼ teaspoon Kosher salt
1 teaspoon unsalted butter
¼ teaspoon baking soda
Methods/steps
Lightly grease the bottom and sides of a ½ size sheetpan. In a heavy bottom saucepan, combine the sugar, corn syrup, water and nuts and salt. Bring this mixture over medium heat to the hard crack stage on a candy
thermometer. Remove from the heat and add the butter and baking soda stirring to mix thoroughly. Pour peanut brittle onto the buttered sheet-pan. When brittle comes to room temperature break into pieces. Enjoy!
