Mashed Pumpkin Potatoes

Ingredients

At a glance

2 cups Yukon gold potatoes, cut into 1 inch cubes
2 cups pumpkin, cut into 1 inch cubes
4 tbs. garlic, roasted
1/8 cup heavy cream
1/4 stick butter
2 tbs. pure maple syrup
Salt and white pepper

Methods/steps

1.    In a large sauce pan cover potatoes and pumpkin with water. Bring to boil and simmer until potatoes are tender, 6-10 minutes.
2.    Drain potatoes and pumpkin and return to pan. Add the garlic, maple syrup , seasoning and butter. Lower heat to the lowest flame possible. Mash by with a potato masher, mixer or immersion blender. Add cream to thin a bit and make mash creamier.
