Jane's Bran Muffins


Bran Muffins


At a glance

In the blender, put:

1 egg
1/2 cup canola oil
1/2 cup milk
1/2 cup sugar

Blend and add:

1 cup self-rising flour
1/2 cup All-Bran cereal
1/2 tsp cinnamon (I just shake the container a few times)


Bake at 400 degrees F. for approximately 20 minutes.

Fill 12 muffin cups half full and add any of the following ingredients:

Raisins, chocolate chips, nuts, crushed pineapple (drained thoroughly), chopped apples, mashed bananas, grated carrots (whatever you like).

I usually use only raisins, chocolate chips and nuts.  Be sure to cover the raisins, nuts, etc. with the rest of the batter so they will not dry out during baking.  Sometimes, I add 1/4 cup more bran and a little less flour. I have altered this recipe many different ways.

The original recipe called for 1/4 cup white sugar and 1/4 cup brown sugar.  It called for plain flour, salt, baking powder, etc. but I think that is too much trouble so I use self-rising flour.  If I am in a hurry, I bake it at 425 degrees for 15 minutes but they are better if cooked at 400 degrees for 20 minutes.
