1 tablespoon freshly ground black pepper
1/2 tablespoon sea salt
2 shallots, sliced
2 sprigs thyme leaves stripped from stem
1 teaspoon balsamic vinegar
2 tablespoons extra virgin olive oil
1 porterhouse steak
In a bowl, combine the first six ingredients and rub both sides of the steak with equal amounts of the mixture.
Let marinade for 2 hours.
Set aside and prepare the grill to medium
Grill the steak on one side for 7 to 10 minutes, keeping the smaller tenderloin section over a less intense heat.
Turn the steak and grill for another 6 to 7 minutes. It should be rare to medium rare at this point. Remove from grill and transfer to a cutting board for options, or to your plate with options.
