Grape and Cranberry Tea Bread


Grapes andcranberries are a lovely combination. This recipe is courtesy of the California Table Grape Commission.


At a glance
2 loaves or 4 small loaves


Canola oil spray for greasing.

2 1/2 cups flour,plus more for dusting 3/4 cup sugar

3teaspoons baking powder

1teaspoon salt 1/4 cup canola oil

1 cup low-fat sourcream

1/4cup low-fat milk

1 large egg, beaten

2teaspoons lemon zest

1/2cup chopped walnuts

1/2cup chopped dried cranberries

1 1/2 cups halvedfresh California seedless grapes




Preheat the oven to 350°F.

Grease 2-9x5-inch loaf pans or 4 mini loaf pans with the spray andlightly flour the bottoms of each greased pan.

Combine 2 1/2 cups of the flour,the sugar, baking powder, salt, oil, sour cream, milk, egg, lemon zest,walnuts, and cranberries, and mix well.

Gently fold in the grapes, and pour thebatter into the prepared pans.

Bake for 40 to 45 minutes or until a cake testerinserted in the center comes out clean.

Cool for 5 minutes, and then turn out onto wire rack.

Cool completely before slicing.
