Fruit Pizza

1 14 inch prepared pizza crust
2 tbl. fresh mint, washed and finely chopped
1 pkg.  (8 oz.) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 oz.) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 can (11 oz.) mandarin oranges, drained
1 cup thinly sliced strawberries
1/4 cup sugar
1/4 cup apple juice
2 tablespoons water
1-1/2 teaspoons cornstarch
Pinch salt

Methods/steps

Place pizza crust onto an ungreased 14-in. pizza pan. Bake at 375 degrees F. for 10-12 minutes or until browned; cool.
In a mixing bowl, beat cream cheese and confectioners' sugar and mint until smooth. Fold in whipped topping. Spread over the crust. Arrange the fruit on top. Combine cornstarch and water. In a saucepan, heat apple juice and salt to a slow boil, whisk until thickened. Brush over pizza and fruit and place in refrigerator.
