Colcannon Irish Stuffed Potatoes
Description

Ingredients
6 large russet potatoes
12 ounces white cabbage, shredded and sauted in butter til cooked through
12 ounces corned beef, chopped
4 ounces unsalted butter
4 ounces sour cream
4 ounces Irish cheddar cheese, shredded
Sea salt and freshly ground pepper
Methods/steps
In a 350 degree oven, bake the potatoes 40 minutes or until when peirce
with a skewer the insides feel tender. Chill slightly, then remove the
top of the potato and scoop out the insides to a mixing bowl. Add
remaining ingredients to the mixing bowl and mash the best you can to
incorporate all of the ingredients. Stuff the filling back into the
potato shells, place back into the oven for 10-15 more minutes, serve
immediately.
