Chocolate Toffee Matzo
1 ½ Stick of Unsalted Margarine (or Butter)
½ Cup of Sugar
1 ½ Cups of Chocolate Chips
Line your baking sheet with aluminum foil. Lay the matzos on the baking sheet. (You can break them into pieces, so that they fit more easily.) In a small saucepan, melt the margarine (or butter) over medium-high heat. Slowly add the sugar and be sure to stir it until it dissolves. Then pour the margarine (or butter) mixture over the top of the matzo and spread it with a rubber spatula. Bake at 350 degrees for 6-10 minutes. Remove the matzo from the oven and sprinkle chocolate chips over the top. Return the baking sheet full of matzo to the oven for about 1 more minute. Then remove the baking sheet of matzo from the oven and, with your rubber spatula, spread the now-melted chocolate chips evenly across all the matzo. Freeze the Chocolate Toffee Matzo treats for 15-25 minutes, or until the chocolate hardens. Break them into cookie-sized pieces and store them in your freezer, in an airtight container, separating the layers with wax paper, until a short time before you serve them.
