1 9 inch pie shell
Small handful dried beans
1 cup dried fruit (raisins, currents, prunes, dates or craisins)
3/4 cup chicken broth
1/2 tsp. salt
1 whole baked chicken, meat pulled from bone
1 carrot, peeled and diced
1/2 cup frozen green peas
1/2 tsp. cinnamon
2 tbsp. whole unsalted butter cut into small pieces
1 tbsp. brown sugar
Preheat oven to 350 degrees.
Line the bottom of pie shell with beans and blind bake for 5 minutes. Remove and discard beans. Allow crust to cool.
Mix chicken broth with cinnamon, peas and carrots. After mixture is blended add dried fruit.
Line pie crust with pulled chicken meat. Pour broth mixture over chicken. Top with butter.
Cover with foil, bake for 25 minutes.
Uncover, sprinkle with sugar, bake an additional 10 minutes.
Serve by scooping up filling and crust with a spoon.
