Candied Ginger Scones
Ingredients
DRY:
3 tbl cold unsalted butter cut into pieces
1 cup all purpose flour
¼ cup sugar
2 tsp baking powder
¼ tsp salt
¼ chopped candied ginger
WET:
1 oz beaten egg
¼ cup half and half
Methods/steps
Mix the dry ingredients. Cut the butter in with plastic knives until butter is coated with flour and large pieces look like peas and the rest looks like bread crumbs. Add the wet ingredients and the ginger. Mix together until dry ingredients are moist. Gather into a ball and knead against the sides of the bowl until all of the dough comes together and is coming away from the sides of the bowl. Transfer to a floured surface pat down with your hands. Brush with cream and butter and cut into 6 wedges and place on a baking sheet and place into a preheated 425 degree oven for 10-12 minutes.
