Buttermilk Prune Cake


This recipe is thanks to Carol Steig (ND) who won first place in the Northern Canola Growers Associations “Canola Cook Off” 2005.

1 cup canola oil
¼ cup sugar
½ cup buttermilk
3 eggs
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 ½  tsp cinnamon
1 ½  tsp. nutmeg
1 cup prunes, chopped
1 cup nuts, chopped and toasted
Canola baking spray

¾ cup sugar
½ cup buttermilk
1 tsp. baking soda
¼ canola margarine


In large mixing bowl, blend canola oil, sugar, buttermilk and eggs until smooth.  Add dry ingredients, mixing well.  Add prunes and nuts.  Spread mixture into a 9 x 13” baking pan prepared with canola baking spray.
Place into preheated oven at 350 degrees for 40 minutes.  When cake is done, remove from oven and prick holes with fork over entire cake.
Combine sauce ingredients of sugar buttermilk, soda and canola margarine in a small mixing bowl.  Pour over warm cake.  This dessert can be served warm or cold. 
Store in refrigerator.
