Applesauce Matzo Kugel

4 Matzos
3 Eggs
½ Teaspoon of Salt
½ Cup of Sugar
¼ Cup of Melted Margarine or Butter (½ stick)
1 Teaspoon of Cinnamon
1 ½ Cups of Chunky Applesauce (or To Taste)


Break the Matzos into pieces and soak them in water until they are soft.  Drain them, but don’t squeeze them dry.  Beat the eggs and the salt.  Add sugar, melted margarine (or butter) and cinnamon.  Add the matzo to this mixture.  Stir in the chunky applesauce.  (Adjust to suit your taste, so that the applesauce neither drowns the other ingredients nor disappears.) Pour mixture into a shallow baking dish.  Dot with additional margarine or butter.  Bake at 350 degrees for approximately 45 minutes, or until lightly browned.
