Apple Pound Cake

2 loaves

1/2 pound (2 sticks) butter, plus more for pan
3 cups sugar
3 eggs
3 egg yolks
3 cups all-purpose flour, plus more for pan
1/2 teaspoon fine salt
1/2 teaspoon baking powder
1 teaspoon vanilla extract
2 gala apples, shredded
2 cups apple brandy


Preheat oven to 350 degrees F.

With a mixer, cream butter and sugar. Add eggs, 1 at a time, beating after each addition, add yolks. Stir dry ingredients together in a bowl and add to mixer alternately, starting with the flour and ending with the flour. Mix in vanilla and shredded gala apple. Pour into two greased and floured tube pan and bake for 1 hour, until a toothpick inserted in the center of the cake comes out clean. After taking the cakes out of the oven, let rest for ten minutes on a wire rack, invert onto the wire rack to completely cool.  Drench each loaf with one cup of apple brandy.  Wrap with plastic wrap and don’t eat any until the next day; yum!
